No Mexican food fatigue ... yet!

It seems we’re not over Mexican food yet, so we had lunch at work ordered from a seafood restaurant today. Mine was the Wednesday Special which is called "Filete Empapelado" which is boneless fish fillet wrapped in foil to lock the crème sauce with onions and bell pepper. I’m guessing it has chili powder because of the hint of spice albeit not overpowering. It is served with beans, tortillas and a side salad. Freshness and the yummy sauce made the dish stand out and I will most definitely cook my own version soon. I took a couple of pictures but they’re not really good. Maybe better ones when I cook my own :-)
