Baked Lemon-Butter Tilapia with Capers

I made this last night when I made my broiled eggplant with tahini and yogurt sauce. This is a no fuss dish and involves only a few steps. Not only is the dish tasty- it is also light and perfect for dinner or when you want something easy on the tummy.


4 tilapia fillets
juice of a lemon
half a stick of butter, melted
1 tsp sea salt
1 tsp dried oregano
1 tsp dried parsley flakes
2 tbsp capers, drained
lemon slices

Preheat oven to 400 degrees F
Whisk together lemon juice, melted butter, salt, oregano and parsley flakes
Arrange tilapia fillets in a buttered baking dish
Pour lemon-butter mix over the fillets
Arrange lemon slices on the sides
Sprinkle drained capers on top
Bake for 15 minutes or until fish flakes easily with a fork

Note: I scooped the lemon-butter sauce on top halfway through the process to make sure the top part of the fillets absorb more sauce
