Lemon-Pepper Pappardelle with Shrimps
I could have tried making this wide and flat Italian pasta if I have my own pasta maker but since my fairy godmother has yet to send it; I opted for the commercial one sold at my favorite Trader Joe’s. I got the lemon-pepper flavored variety with a simple recipe idea- just to cook the pasta al dente and toss it with shrimp sautéed in olive oil. And the funny thing is the recipe at the back of the package. It is identical to what I have in mind. The only difference is prawns which I don’t have and red pepper flakes to spice it up. No big deal, they belong to the same family so my dinner is ready in twenty minutes. This is the same recipe I use when making my Lemon Pasta with Chicken.
Lemon-Pepper Pappardelle with Shrimps
Ingredients:
8 oz Pappardelle pasta
3 tbsp olive oil
1 lb medium sized shrimps, peeled and deveined
juice of half a small lemon
1 tsp pepper flakes
salt and pepper to taste
chopped Italian parsley for garnish
Directions:
Cook pasta al dente - about six minutes (You can actually do this and prepare the shrimp at the same time)
Heat olive oil in a pan on medium heat
Season shrimps with salt and pepper
Sauté until pink and add chili flakes
Drain pasta then toss with shrimps and lemon juice
Sprinkle with parsley and serve
