Baked Sweet Apple Pancake


I think it is safe to say this breakfast item is going to be a series now. I planned to make one for Lola last week but the Lobster Mac & Cheese kind of got in the way. This reminds me of the sweet apple pancake of Polly's except that they make it sweeter and more dense.

The procedure is no different from the baked pancakes I made except cooking/softening the apples first in a little brown sugar and butter. Then just arrange the slices on top of the batter and bake for 25 minutes at 400 degrees F. Remember to put a tent on top when it starts browning fast and it's not cooked through.

Baked Sweet Apple Pancake

Ingredients:
1 gala apple, washed and dried; cored and sliced thinly skin on
1 tablespoon butter
2 tablespoons brown sugar

Melt butter in a non-stick pan with sugar
Add sliced apple and cook until soft, set aside

Ingredients for the batter:
1/2 cup all purpose flour
3/4 tsp baking powder
2 tbsp granulated sugar
2 eggs, separated
1/2 cup 2% fat milk
1 tbsp unsalted butter

Procedure:
Preheat oven to 400 degrees F
Melt butter in a pie dish (place the butter at the center of the dish and microwave to melt) and swirl to distribute evenly
Mix all dry ingredients
Beat together egg yolks and milk
Add egg and milk mixture to dry ingredients, mix thoroughly
Whip egg whites till stiff
Fold into the flour mixture
Pour into the pie dish
Arrange apple slices on top
Bake for 25 minutes
Serve with powdered sugar and maple syrup

This is Saturday's breakfast with eggs and turkey bacon- it is over the top and it's not even expensive.
