Fruit & Cottage Cheese Parfait
This monstrosity of a parfait is packed with all the healthy goodness of fresh pineapple, papaya, strawberries, blueberries, mango and grapes with layers of low-fat cottage cheese topped with granola with a drizzle of honey. I'm in this mode that I had it for brunch and dinner. And it is filling! Just make sure to drain the cottage cheese before assembling with the fruits. I forgot to do that in my haste so the bottom had a little bit more juice aside from the fruits. Not bad, but it can be helped.
