Hot Sunday

With the blazing hot weather, who would want to venture outside? A dip in the pool would be nice but since we don't have one where we live, I just made something that will cool us down .... pat bing su.... yup, but I don't have red beans, mochi balls and green tea ice cream. But I do have strawberries, kiwis, cantaloupe, bananas, my ice shaver and lots of fruit syrups, condensed milk and mango puree. Oh, and I also have vanilla yogurt so here, my pat bing su!



Completing the "ensemble" is cheese sponge cupcakes i baked earlier. They're yummy and so easy to make.


Cheese sponge cupcakes
Ingredients
6 eggs separated
1 cup cake flour
1 tsp cream of tartar
1 tsp baking powder
1 tsp vanilla
½ cup vegetable oil
1 ½ cup sugar

Method:
Pre-heat oven to 350 degrees
Sift together cake flour and baking powder
Sift sugar separately
Beat egg whites and cream of tartar till creamy but not stiff
Add sugar and whip till fully dissolved
Add oil, vanilla
Add one egg yolk at a time
Add the dry ingredients and mix well
Grease muffin trays and scoop batter about ¾ full into each hole
Bake at 350 till skewer inserted comes out clean
Top with a little butter and grated cheese

  2. Welcome to my page! And I'm grateful and thankful for the kind words. Oh, but don't let the absence of a nice kitchen deter you from learning how to cook. There's so much you can learn even just using the simplest kitchen gadgets as long as you're interested and passionate about it.
