Red bean rice cake

I know I'm late but Gung Hay Fat Choy or Gong Xi Fa Cai!



I may be late with my Chinese New Year greeting and late as well posting but I got this early from my co-worker. I think she feels like I'm her adopted little sister because she just loves giving me little things from her trips and whenever she feels generous. The rice cake is like a yearly present from her and when I saw the box on my desk, I didn't notice the difference till I got home and thought of cooking it. Cooking is a simple ritual of slicing the rice cake thinly, dip the slices in beaten egg then fry in vegetable oil till the sides are crispy. The final act is serving it with sugar and your favorite beverage as a snack.

I was surprised because this is a different variety; it is flavored with red beans! I immediately prepped some for cooking; so excited to taste it. OMG, it is so delicious. When did red beans ever taste not delicious anyway? This one doesn’t need sugar anymore because it is somewhat sweet already although I think others would still love to sprinkle some on it. I will be looking forward to this come Chinese New Year's Day next year.
